Citrus Garlic Ginger Chicken
3½ lbs chicken parts, de-jointed and breasts de-boned
Black pepper
1 tbsp fresh ginger
1 cup chicken stock
3-4 tbsp coconut oil
1 tbsp minced garlic
1 tbsp lemon zest
1 tbsp lime zest

Preparation: Season chicken pieces on both sides with salt and pepper to taste. Brown chicken pieces in 2 tbsp coconut oil and set aside. After the chicken is cooked, finish the sauce by swirling in the remainder of the coconut oil.

Grilled Mango Salsa Pork Chops

1½ jalapeno pepper, finely minced
Barbecue seasoning
1 tbsp finely minced red onion
¼ cup finely diced red bell pepper
1 ripe mango, peeled and diced
1-2 tbsp orange juice

Preparation: Season pork chops and set aside. Combine the remaining ingredients and leave at room temperature until serving time. Barbecue over high heat and sear on each side, then reduce heat to medium and move chops away from the flame, close the lid and cook until done. (If you are lucky enough to have one of those complete camp kitchens or cooking stations, that could work great for this one.)
